Case Study and Resources
Frequently, conversations take place that focus on the importance of diet and the food that we eat. In many cases, there are connections or sales pitches for dieting programs, weight loss supplements, and other proposed solutions to food related struggles. More recently, digestive health has become a focal point. At the center of much of the information regarding digestive health is dietary fiber.
Dietary fiber comes in two forms: soluble and insoluble. You examined solubility rules and scenarios with different compounds beginning in Module 9. Each type of fiber has its benefits, and the inclusion of both in daily food intake is necessary. Though they are related, soluble and insoluble fiber do have slight variances.
Imagine you are a nutritionist and you have been tasked with making recommendations related to dietary fiber for three different patient scenarios. Use what you have learned about solubility up to Module 13 and these additional resources to help you make your decision:
Probable Solutions for the Case Study
Using the information in the case study above, the additional resources, and what you have learned from Modules 6-13, which report would you submit from the choices below?
Option A: Patient A
Patient A is a 55 year old male with Type 2 diabetes. He has been told to watch his blood sugar levels, but still to get enough fiber. Figure out what is the best type and sources of fiber for Patient A while being mindful of his diabetic condition.
Option B: Patient B
Patient B is a 35 year old woman who wishes to lower her cholesterol and lose weight. Recommend a week-long eating plan for Patient B that will put her on the right track to potentially meet her goals.
Option C: Patient C
Patient C is a 10 year old male with a severe nut allergy. He is also a picky eater who refuses to eat green vegetables. Outline a meal plan for Patient C’s parents as they must collaborate with their child’s school to ensure that he receives adequate nutrition, including dietary fiber.
