Purpose: The site assessment assignment is intended to offer you the opportunity to explore sustainability practices in the context of a real, live business
Instructions: 1. Consult the hospitality industry umbrella presented below (it is probably familiar from your hospitality operations management course);
2. identify a business that fits in the industry umbrella, engages in sustainable practices and to which you can gain access for first-hand observation and interviews. It is not essential that the chosen business ‘calls itself’ sustainable or demonstrates sustainability in each and every practice; however, the more opportunities there are for you to observe sustainability in action, the better; It is not required that you draw on published articles about your chosen business; if such articles do exist, it would add dimension to your work.
3. For the assignment adopt a ‘sustainability lens’ as you explore the business; this entails that you will use a sustainability perspective to describe and make sense of the business and its practices. In other words, your description of the business and its practices should be detailed and you should be applying course concepts and theories to analyze the business and its practices.

The following offers a few guidelines to start you off in your assignment:
What is the business you are studying? Where is it located? Describe its ‘sustainable’ practices. Why do you describe these as sustainable (drawing on course concepts)? Why does this organization engage in sustainable practices? What do you think of their implementation of these practices? What are the implications of these practices? What thoughts do you have about their practices? What recommendations would you make?
